Malvern Instruments will demonstrate how the Kinexus rotational rheometer and Mastersizer 3000 laser diffraction particle sizing system enable smarter, faster and more effective strategies for food development at FoodTech Processing & Packaging.

The conference takes place at MCH Messecenter Herning, Denmark, from 28 to 30 October 2014. Malvern’s food characterization experts will be on hand throughout the event to demonstrate the analytical strategies that help R&D and QC scientists develop high performance products with enhanced consumer appeal. Malvern analytical systems are designed to help developers better understand how the physical properties of food affect product quality and processibility. Particle size often determines perceived quality, such as the taste and aroma of freshly brewed coffee, as well as the structure and stability of dispersion or emulsion products. The market leading Mastersizer 3000 laser diffraction system delivers robust and reliable wet and dry particle sizing across a size range from 0.01 - 3500 µm. With easy method set-up and push button functionality, the Mastersizer 3000 generates particle size and size distribution data to ensure product quality throughout formulation and manufacture.

Greater understanding of how to control the complex relationship between food ingredients and the methods used in their processing, and final structure and quality, is also helpful in meeting performance targets. Rheological characterization with Malvern’s Kinexus rotational rheometer helps developers quantify abstract performance targets, such as visual appeal or mouth-feel. With smart software and a ‘user-friendly’ interface, the Kinexus rotational rheometer is designed to generate relevant rheological insight for all users, from rheology specialists through to those with limited experience of the technique.
